Keto-Friendly Chocolate Zucchini Fudge Cake

What summer would be complete without Keto-Friendly Zucchini Fudge Cake? Forget the s'mores, pass me some chocolate cake with low-carb vanilla ice cream instead.

A friend of mine was making chocolate zucchini cake for dessert one night, but I wasn’t going to be able to participate since it was full of gluten and sugar. I asked if she could send me the recipe so I could try to come up with Keto-friendly version on my own.

My first attempt tasted good, but took way too long to bake. It had too much liquid. My second attempt was much better. I love how it comes out a little gooey in the center, but after it’s refrigerated it has a fudgy texture.

It is very important to use Blue Diamond Almond Flour and Pyure Organic Stevia Blend Sweetener to get the right taste. Not all almond flours or stevia sweeteners are made the same and some will ruin the flavor of your masterpiece.

Ingredients

3 Eggs

¾ c. Pyure Organic Stevia Blend Sweetener

1 stick Salted Butter (melted)

2 t. Vanilla

2 c. Shredded Zucchini

2c. Blue Diamond Almond Flour

½ c. Coconut Flour

½ c. Cocoa Powder

1 t. Baking Soda

½ t. Baking Powder

1 t. Salt

1 c. Lilly’s Stevia Sweetened Chocolate Chips


Step-by-Step Instructions

  1. Preheat the oven to 350 degrees. Line a 9x5 loaf pan with parchment paper.

  2. In a medium sized bowl, mix all dry ingredients and set aside.

  3. Mix zucchini, eggs, and vanilla in a blender. I like to use a Bullet blender. Pour the zucchini mixture into the dry ingredients. Add melted butter. Mix thoroughly. Fold in chocolate chips. Pour into prepared loaf pan.

  4. Bake for 55-60 minutes, or until the center appears mostly set. Be careful not to dry out the edges. Let cool completely before refrigerating. Slice into one half inch pieces and serve chilled.
