KETO Friendly, Sugar-Free, Low Carb Strawberry Jam Drizzle

Once we added an Amazing KETO Low Carb Almond Flour Bread That's Super Easy to Make back into our diet, we started to crave other goodies, like strawberry jam.


Berries are some of the lowest carb fruits available, so we keep them in our diet regularly. Adding one or two strawberries to our plates seems like a special treat when you are on the KETO diet. We never dreamed of eating jam again, because we knew it was packed full of sugar and the fruit was more concentrated. Which meant way too many carbs for us.


But what if there was a way to make a healthy strawberry jam? There are suger-free strawberry jams out there, if you are willing to pay for them, and if you don't mind artificial sweeteners. However, we're Eating KETO on a Tight Budget, which means we don't have room for costly treats most of the time.



What you will need:


2 cups Fresh or Frozen Strawberries, sliced


1/2 cup Water


4 tablespoons Monk Fruit Sweetener


2 teaspoons Lemon Juice


1/2 tablespoon Unflavored Gelatin


Step-by-Step Instructions

1. Add water, lemon juice, Monk Fruit Sweetener, and strawberries to a medium sauce pan and bring to a boil.

2. Turn down the heat to medium/high and begin mashing the strawberries with a potato masher or the back of a large spoon.


3. Allow the strawberries to simmer for 8-10 minutes on medium heat.


4. Carefully add the gelatin as slow as possible while using a whisk to stir the jam. Continue stirring for 2-3 minutes until gelatin is completely dissolved.


5. Let the strawberry jam cool completely. Then pour it into a glass jar and refrigerate immediately. The jam will thicken the longer it remains in the fridge.



A Few More Tips & Tricks


For a thicker jam, add more berries or more gelatin. Additional fruit will add more carbs, while gelatin will not.


You can use other types of berries in this recipe, just remember different berries will have different carb counts.


To use as a sauce, or syrup, on ice cream or on Vanilla French Toast with Strawberries & Cream, reheat a small amount in a bowl in the microwave for a few seconds. It's also good drizzled on pork chops, or added to a vinaigrette salad dressing.
