What you will need:
1 egg at room temperature
(The easiest way to do this is to soak the egg under warm water for about ten minutes while you are getting the other ingredients ready - this prevents the egg from having to sit out for a long period of time.)
1 teaspoon Apple Cider Vinegar
1 teaspoon Dijon Mustard
1/4 teaspoon salt
1 cup Extra Light Olive Oil
(It is extremely important that you use extra light olive oil if you don't want a bitter tasting olive oil mayonnaise.)
Step-by-Step Instructions
1. Add Apple Cider Vinegar, Dijon Mustard, and salt to a glass bowl.
2. Break room temperature egg and add to bowl.
3. Using a hand mixer, beat on high speed for 30 seconds.
4. Slowly add Extra Light Olive Oil to the bowl while continuing to mix on high speed. You should pour and mix for 90-120 seconds until the mayonnaise begins to thicken up.
Makes approximately 1.5 cups. Refrigerate immediately. Discard after 7-10 days.
PLEASE NOTE: Olive Oil Mayonnaise will be thinner than store bought mayo since it does not include additional fillers. If you prefer a thicker olive oil mayonnaise, you may want to add a pinch of guar gum, which I do use when I make our Smooth and Chunky Blue Cheese Dressing and Dip.
