Try to remember the last time you were at an All-You-Can-Eat salad bar. Do you recall the spectacular assortment of brightly colored vegetables, crisp lettuces, tantalizing fruits, and crunchy toppings? By the time you get to the dressing selection, your salad is as tall as a small cake waiting for it's frosting.
And that's what most dressings are to a salad - icing on a cake. We dip the ladle into the thick, white and creamy blue cheese goodness, and think, "This can't be good for me." We push those thoughts aside, reminding ourselves that we are eating a bunch of vegetables - which are very good for us. We try not to feel guilty about spoiling our healthy food with a heavy coat of fat.

You don't have to feel guilty anymore. There is a way to layer on the dressing and actually make your salad better for you.
If you are familiar with the KETO Diet, you know what I'm talking about. For those of you who aren't, let me explain.
Salads are KETO friendly, as long as they contain lower carb, high-fiber vegetables. Focus on your dark greens, peppers, olives, cauliflower, nuts, hard-boiled eggs, pepperoni, ham or cheese. Skip the higher carb selections such as beets, beans, and fruit. A small sprinkling of shredded carrots or a strawberry won't mess up the carb count that much, just don't over do it. Instead, enjoy the fact that you can pour a tasty dressing on top of your masterpiece without feeling guilty.
This is especially true if you make your own smooth and chunky blue cheese dressing for your salads at home. This thick topping is filled with healthy monounsaturated fat, antioxidants, and anti-inflammatory agents. The base for this recipe is my Marvelous Olive Oil Mayonnaise. Whether you are looking for a scrumptious dressing for your salad, or a dipping sauce for your hot wings, this smooth and chunky blue cheese dressing hits the spot!
What you will need:
1/2 cup Marvelous Olive Oil Mayonnaise
1/2 cup Crumbled Blue Cheese
1/4 cup Almond Milk (or any milk)
4 teaspoons White Wine Vinegar
1/4 teaspoon Garlic Powder
2 drops Stevia Extract (or pinch of sugar for non-Keto)
Salt & Pepper to taste
Optional:
Extra Blue Cheese Crumble
1/4 teaspoon Guar Gum (for added thickness)
Step-by-Step Instructions
1. Combine the first seven ingredients in a Magic Bullet Mixer or other personal blender and mix for about one minute. If you don't have a personal mixer, you can mash the ingredients together in a small bowl.
2. Check the thickness of your dressing. Add Blue Cheese Crumble for additional texture, and/or guar gum, which will make for a super thick and rich salad topping or dip.
3. Refrigerate for 2-4 hours to allow time for the flavors to settle properly. But if you just can't wait, the dressing is okay to use at this point.
Makes approximately 1.5 cups. Keep refrigerated. Discard after 7-10 days. Perfect for salads, hot wings, omelets, tacos, burgers, steak, chicken, and pretty much anything!
