When we began the KETO diet in 2018, it was very intimidating. The idea of eating mostly fat and eliminating sweet treats from our diet didn't make logical sense. It didn't sound fun. Our motivation wasn't weight loss or getting fit. It all began with a fast from sugar.

A friend told me, "You've already given up sugar for the month, so trying the KETO diet shouldn't be that hard." I took the bait and fed it to my husband too. The results were amazing. Increased energy. Unintentional weight loss. My brain fog lifted.

For the first time in my life I felt like I had the energy to work long hours without napping. I could think clear enough to get multiple projects done in record time. The inflammation in my joints disappeared. My gut was even doing better than I ever thought it could while eating what I considered very heavy foods.

Dr. Colbert explains some of these phenomenons in his book, Dr. Colbert's Keto Zone Diet. I reread the text once in a while just to make sure we are eating as healthy as possible. There is a wrong way to eat KETO, and it can mess you up if you aren't careful. Fish is one of the best things for your diet that we struggle to partake in regularly. However, we have learned how to incorporate olive oil almost every day.

The recipe for this peanut butter chocolate shake came after we felt we could add a few carbs back into our diet. I probably wouldn't recommend it if you are still trying to lose weight, but if you are maintaining your weight, it should fit below your ideal net carb count. It could also be your once a week treat that doesn't throw you off too much.

What you will need:

1 teaspoon MCT Oil Powder

2 rounded teaspoons Unsweetened Cocoa Powder

Optional: Ice

Step-by-Step Instructions

1. Combine all ingredients in a blender. I like the convenience of a personal size blender, like the Magic Bullet.

If you would like your shake a little colder or thicker, add in a couple ice cubes. This shake can be enjoyed as a meal replacement, or, drink half for an afternoon snack or dessert.
